Couples marry among the centuries-old olive trees, guests seated in the round on the lawn, or beneath a covered pergola dressed with drapes. Aperitivo follows in the illuminated courtyard as the festoon lamps come on, and dinner is served at long candlelit tables in the covered dining hall or beneath a canopy of fairy lights strung between the olives, for up to around two hundred guests.

The estate keeps a working kitchen garden the chef walks each morning, and the cooking is genuinely farm-to-table Apulian: seafood crudo and mozzarella, Puglian cured meats, plated courses, cheese and antipasti drawn from the land and the coast. Aperitivo comes with negroni and Puglian wine in the lit courtyard, and dinner runs long into the southern night.

The estate keeps its own orto, a working kitchen garden, and the chef, Giuseppe, walks the rows each morning, gathering aubergine, chillies, greens and herbs for the day's cooking. It is farm-to-table in the truest sense, the produce carried from the garden to the pass to the table, a few metres and a few hours apart, so a wedding dinner here tastes of the exact patch of Puglian earth it is served on.
